[Q] Media Player ROM topic

Does anyone know if there is a ROM that has cell radios removed and all phone related apps removed? Or does anyone have instructions on what to remove when building a ROM to remove all that stuff? I want to get my daughter a media player like an iPod but not apple. I know I can disable the radio but I would prefer for her to not figure out how to turn it on and I would like to get rid of the phone apps.
